Fir needles give off a woody aroma reminiscent of our boreal forest. They go wonderfully with jellies, vinaigrettes or marinades. It is a good boreal substitute for the Mediterranean scent of rosemary. Fir needles go very well with desserts such as panna cotta and crème brûlée, or even ice creams, sorbets and granitas.
